Are sitemaps important ?

Surely google is clever enough to index all your pages by just following all of your sites links. Does it really speed up or help with spiders crawling your site ?

Yes, of course.
Sitemaps are very important not only for Google but for other SEs also.
If you have some pages 4-6 clicks from main page, it can take some time to get indexed.
Sitemap helps you and SEs to index quickly your pages.

Up till this point I've always heard that sitemaps are tremendously important to your website to get ranked higher. I just never saw how. I do believe that google encourages them though.

Google certainly recommends them but how much quicker you get indexed by having them is an all together different factor. To be on the safe side i'd certainly recommend using them.

I don't see any harm in using the google sitemaps. I certainly use them and if it helps me with google, heck, count me in I'll do it! There's no downside so why not.

Every time that I've added this to my my website I've found that google indexes the websites much faster, when compared to not using the sitemaps.
